Wheat, flour and bread have changed greatly over the years as the techniques of farming, milling and baking have been transformed by industrial and cultural shifts. Some have been for the better and others not. This presentation will attempt to weave a thread through this 10,000 year tale from the vantage of the farmer, miller and baker. We’ll explore the first genetic mutations that resulted in modern wheat and the genetic developments of the modern era of plant breeding. We’ll explore the equipment and techniques utilized then and now to produce wheat along with a detailed look at the specific infrastructure and tools being utilized and developed at Dunbar Farms. We’ll explore the way in which milling and baking has developed and the benefits and ramifications of this. Lastly, we’ll look at the likely future of wheat production, processing and consumption when the farm and the farmer’s perspective are taken into account. Join us for a wheat odyssey…
